Rabdi

Its an easy to make dessert if you have sudden arrival of guests at home........... although it happens more in India then here in US. Its a dessert that can be ready in minutes.

The name itself makes us drool. Everyone of us like this Shahi dessert but cannot consume it on regular basis as it has lots of high calories due to condensed milk which is very rich in sugar. Rabdi is relished with Jalebi in Indian marriages....... oops i missed the combination this time.

Ingredients
  • 1C Milk
  • 1C grated paneer(How to make Paneer)
  • 1/2C condensed milk
  • 5 green cardamoms
  • 1/2 tbsp ghee
  • 1/2 tsp rose essence
  • few saffron strands
  • handful of pistachios and almonds chopped

Method
1. Crush the cardamoms finely.

2. Mix everything except nuts.

3. Microwave for 7 minutes.

4. Add chopped nuts and let it cool for 10 mins.

5. Refrigerate and serve chilled.

Note:

1. The paneer should be unsalted.

2. The microwave bowl should be such that it has enough space for milk to boil such that it does not spill over. The bowl should be filled just half or less than that.

No we dont need sugar coz the sweetmess wil come from condensed milk which itself has sugar
