Eggless Date Cake

This is a eggless cake for all those cake lovers who relishes cake but are unable to eat one due to eggs. I hope everyone will relish this simple to bake cake. This cake does not use any butter or oil so you can say its Cholesterol free :) . It just uses milk, dates ,nuts and sugar(can replace it with splenda or altern). No butter no egg so this cake is less dense but it is a healthy option for health conscious people.

I used these ingredients for a loaf and 1 circular cake(9"). The circular cake had less batter so it was thin but loaf was pretty good. You can use the same amount of ingredients for 9" circular bake pan.

Ingredients

  • 40 Dates(Khajoor)
  • 2C All purpose flour(maida)
  • 3/2C milk
  • 3/2C sugar
  • 2 tsp baking soda
  • 1C halfed cashews, almonds
  • 1C oil(optional)

Method
1. Soak the dates in warm milk for atleast 5-7 hrs to remove seeds. If using seedless dates then no need to do that.

2. Make a smooth paste using Dates, Sugar and milk.

3. If using oil, add and mix well.

4. Sieve together all purpose flour and baking soda.

5. Add this mixture to the paste 1 tbsp at a time and keep mixing using electric mixture or spatula. Always keep in mind that mixing should be in same direction.

6. Add Nuts and mix well.

7. Preheat Oven to 350F.

8. Grease an oven proof dish with butter and freeze it for atleast 5 minutes.

9. Pour the batter.

10. Bake it for atleast 30 min.

11. Check the cake with skewer or knife. If it comes out clean, it means cake is ready.

Note:

The Color of cake depends on the dates used so it can have slight variations in color every time you bake.


Serving Suggestions

1. It can be served as dessert with Vanilla ice cream.

2. It can be taken as a snack with tea.

3. It can be taken as a sweet after dinner.
