Gobhi Manchurian

“Manchurian” is basically a Chinese dish.

Indian Chinese cuisine has adapted Chinese cooking technique to suite Indian taste. Vegetarian Manchurian can be made with Cauliflower florets or with Vegetable Balls.

Gobi Manchurian

I have always liked eating Chinese back in India but was not satisfied eating Vegetarian Chinese here in US. So to satisfy my taste buds i tried this Gobhi Manchurian myself. I have used all the ingredients according to my taste that i feel would suit most of the taste buds. But we all know every one has their own taste so you can add or subtract any ingredient according to your taste.

Ingredients for Manchurian

  • 15 cauliflower florets
  • 3 tbsp Corn Flour
  • 5 tbsp All Purpose Flour
  • ¼ cup Water
  • 1 tsp Fine Black Pepper
  • Salt to taste

Ingredients for Sauce

  • ½ cup Chopped Spring Onions
  • 1 tbsp finely Chopped Garlic
  • 2 tsp finely Chopped Green Chillies
  • 2 tsp Finely Chopped Ginger
  • 1 tbsp Corn Flour
  • 1 tbsp Soy Sauce
  • 1 tbsp Tomato Ketchup
  • 1 tbsp Vegetable Oil
  • 1 cup Water or Vegetable Stock
  • Salt to taste
  • Freshly Chopped Coriander

Preparation

Manchurian

  • Heat oil in a deep fryer
  • Dissolve the corn flour and all purpose flour along with pepper and salt in water.
  • Add the cauliflower florets and mix until the florets get coated with the flour mixture.
  • Add florets to the hot oil and fry until golden brown.
  • Remove from oil and drain any oil with paper towels.
Once the florets are ready, keep them aside and prepare all ingredients for sauce.

Method for Sauce

  • Mix corn flour with ¼ cup of water. Add soya sauce, ketchup and salt.
  • Heat oil in a pan and add garlic, ginger, green chillies, spring onions and stir fry for a few seconds.
  • Add the corn flour mixture and 1 cup water or vegetable stock.
  • Cook for few minutes until corn flour is cooked.
  • Turn off heat before it starts thickening.
Do not let the sauce to thicken too much because as it starts to cool it will automatically thicken.

Serving the Manchurian

Just before serving, heat the sauce and put in the Manchurian. Stir fry for few minutes. Garnish with spring onion leaves and coriander and serve hot with Chowmein or Fried Rice.
