Almond Biscuits

Easy to make crispy almond biscuits.

Instead of using 3/2C All Purpose Flour, i used 3/4C All Purpose Flour and3/4C Wheat Flour. I also used splenda instead of regular sugar. If using salted butter, do not add salt. Brushing with milk provides glazing. Glazing can be done with a lightly beaten egg instead.


Ingredients

  • 20 almonds
  • 3/2C All Purpose Flour
  • 3/4C Sugar
  • 1tsp Baking Powder
  • 1/2tsp Baking soda
  • 1/4tsp salt
  • 1/2C Unsalted Butter
  • 1 Egg
  • 1tsp Vanilla Essence
  • 3tbsp Milk or 1 Beaten Egg

Method
1. Preheat the oven 400F.

2. Grease the baking sheet.

3. Soak Almonds in warm water for 10 mins.

4.Drain and peel all the almonds. Keep aside.

5. Combine flour, baking powder, baking soda and salt. Sieve the mixture.

6. Whisk butter, sugar and egg until light and fluffy.

7. Add Vanilla Essence.

8. Add mixture and knead a soft dough.

9. Divide into small balls of one quarter inch each.

10. Flatten slightly with palm and brush slightly milk.

11. Press almonds in the center of each biscuit.

12. Bake for 10-15 min or until golden brown.

13. Cool and Serve.

Serve with Tea or Coffee.
