Baigan is also known as Eggplant or Aubergine. Eggplant is low in calories but high in fibres.
Baigan ka Bharta is especially favorite among North Indians.
Ingredients
- 1 large round Eggplant/baigan ( not the small ones and long ones)
- 1C onion chopped
- 3/4C tomato chopped
- 3 green chillies(optional)
- 7-8 garlic cloves, finely chopped
- 2 tbsp mustard oil
- 1tsp cumin seeds
- 1tbsp coriander powder
- 1/2 tsp chili powder
- 1/2 tsp turmeric powder
- 1/2tsp garam masala
- 1/3tsp mustard seeds
- freshly chopped coriander for garnishing
Method
1. Drizzle the eggplant with some oil and then roast it on an medium flame, till all the skin is burnt and the eggplant looks soft.
2. Put the eggplant in a bowl of cold water and leave to cool.
3. When it is cold enough to handle, peel and remove stems. Finely mash it and keep it aside.
4. Heat oil and add garlic and green chillies.
5. When garlic starts giving aroma, add onions and fry until it becomes translucent.
6. Now add ginger and mustard seeds.
7. Add cumin seeds, coriander powder, chili powder and turmeric powder. Mix it quite well.
8. Now add chopped tomatoes.
9. Cook until the oil starts separating for about 15-20 min.
10. Now add mashed eggplant. Also add garam masala.
11. Cook for next 15 min on low flame and keep stirring occasionally.
12. Garnish with fresh coriander.
Serve hot with rotis, naans or rice.
