Homemade Strawberry Ice Cream

Ice cream............ we all love them and my son look so cute when he eats his share and urges for some more. I decided to make some homemade ice cream for my son. It's easy even if you don't have an ice cream maker though it will take some time.

Ingredients

2C Heavy Whipping Cream
1C Milk(i ususally use 1% or even fat free)
3C Fresh Strawberries
2 Egg
3/4C sugar
1tsp Vanilla Essence

Method

1. Rinse and hull the strawberries.
2. Take 2C of them with 1/4C sugar and blend them together. Refrigerate until rest of the work is done. Rough chop the rest 1C strawberries.
3. Beat the 2 eggs until light and fluffy. Add sugar and keep beating until foamy.
4. In deep saucepan, heat milk and egg and sugar solution on medium heat until bubbles start appearing on edges.
5. Let it cool a completely.
6. Whisk the heavy cream thoroughly.
7. Add vanilla too.
8. Combine the egg mixture to cream and fold thoroughly.
9. Fold in the strawberry puree and chopped strawberries.
11. Again allow it to cool until almost freezing.
12. Initially after every 1 hr take ice cream out and blend it for 3-4 times.
13. If you want, you can do that 7-8 times.

Note: If ice cream seems bit hard, put it in the refrigerator half an hour before serving.
