Paneer in Spicy Sauce


Paneer is my little sisters all time favourite.........This is for you sweetie ........ This is my moms recipe............... anything cooked by mom is always flavorful and always filled with lots of love.
This recipe uses different spices to make the sauce spicy and give some good flavors...... My husband loves it when i make paneer this way. Here goes my recipe for Paneer in a spicy sauce........

Ingredients

5-6 tomatoes, sliced
3 bay leaves
3 pods of cardamom
2 sticks cinnamon
1 1/2C water
3 cloves
3-4 pods of garlic
1 1/2 inch ginger
1 onion
1tsp cumin seeds
2 whole red chilli
1/2tsp turmeric powder
1tsp cumin powder
1/2tsp chilli powder
250gm paneer, cut into rectangular pieces
salt to taste
2-3 tblsp of oil

For Garnishing
Garam Masala(optional)
Fresh coriander

Method:

1. Boil tomatoes in water also add 2 bay leaves,cinnamon,cardamom and cloves.

2. When tomatoes become mushy, transfer the entire content to a blender and make a smooth puree.

3. Make a paste with garlic, ginger and onion and keep aside.

4. Heat oil in a pan.

5. Add cumin seeds, the left bay leaf and the whole red chilli.

6. When seeds start poping, add onion paste and stir on medium until it becomes light brown.

7. Now add tomato paste to the pan.

8. Add the turmeric, cumin and chilli powders.

9. Cover and let it cook over low heat, till the sauce becomes thick and there is no water left.(it takes about 20 minutes)

10.Now add paneer and salt and cook for another few minutes till the sauce has further thickened.

11.Add garam masala and simmer for another minute.

12.Remove from heat, garnish with the chopped coriander.


Serving Suggestions

1. Serve hot with rotis or naans

2. It can be served as a side dish with rice.
