Vegetable Manchurian

Here goes the recipe for Vegetable Manchurian. I hope you guys will love n relish the recipe.

Ingredients for Manchurian
2 Carrots
1/4Cabbage
1/2Cauliflower
1/4C Green Beans
4 Spring Onions
3/4C - 1C APF
4tbsp Corn Flour
Salt to taste
1tsp Black Pepper

Ingredients for Sauce

1 cup Chopped Spring Onions
3 tbsp finely Chopped Garlic
3 tsp finely Chopped Green Chillies
1tbsp Finely Chopped Ginger
3 tbsp Corn Flour
3 tbsp Soy Sauce
3 tbsp Tomato Ketchup
1 tbsp Vegetable Oil
3 cup Water or Vegetable Stock
Salt to taste
Freshly Chopped Coriander

Preparartion Vegetable Balls

1.Heat the oil in deep fryer.

2.Finely chop carrots, cabbage, cauliflower, spring onions and green beans.(i usually use food processor to save time)

3. Add 3/4C APF, corn flour, Ginger Garlic paste, salt and pepper. If required you can add more corn flour later.

4.Make a dough out of the above mixture. Do not use water if possible. *

5.The dough should be tight and should be able to hold shape of a ball.

6. Fry the balls in hot oil until golden brown.

7. Remove from oil and drain any oil using paper towels.

Method for Sauce

1. Mix corn flour with 1/2C water.

2. Add soya sauce, ketchup and salt.

3. Heat oil in a pan and add garlic, ginger, green chillies, spring onions and stir fry for a few seconds.

4. Add the corn flour mixture and 3 cup water or vegetable stock.

5. Cook for few minutes until corn flour is cooked.

6. Turn off heat before it starts thickening.**

Serving the Manchurian

Just before serving, heat the sauce and put in the Vegetable Balls. Stir fry for few minutes. Garnish with coriander. Serve hot with Chowmein or Fried Rice.


*When making dough moisture from veggies help in dough making, if required add water a few drops at a time.

** Do let the sauce to thicken too much because as it starts cooling, it automatically thickens and it becomes too sticky if too thick.
